The Year in Crumbs: Good Sourdough in 2025

This year saw sourdoughs from Brooklyn, Upstate New York, Amsterdam, Paris, Nice, Marseille, Oslo and Burgundy. The standout bread for me this past year has been the newly opened Brooklyn Granary & Mill. Alongside ACQ I feel like New York finally has a formidable bread game in town.

Sourdough, Crave, Brooklyn, New York (Jan)

Because I was never sure of the hours for Crave, unfortunately last year’s list didn’t include a photo for Crave, so this year I made sure to get in early on the action.

Crave’s sourdough has an incredibly delicious, burnished crust; an extremely moist interior; and a mild sourdough crumb.

$19 for a medium-large loaf.

I usually get my Crave sourdough from their Bed-Stuy location at 187 Skillman St, Brooklyn, NY 11205. Their success seems to have allowed them to open another location in Boro Park at 5503 13th Ave, Brooklyn, NY 11219

 

Sourdough Boule, ACQ Bread, Brooklyn, New York (Jan, Feb, Mar, Apr)

ACQ Bread remains my favorite sourdough in New York City. The crust is deeply caramelized, the crumb is moist and incredibly flavorful. I love eating their bread plain with good EVOO, or topped with Ricotta and EVOO.

$12 for a medium sized loaf.

ACQ Bread is at 543 Clinton St #1, Brooklyn, NY 11231, but I often buy their bread from the Carroll Gardens Greenmarket on Sundays at Smith St & Carroll St

 

Boeren, Fort Negen, Amsterdam, The Netherlands (Feb)

Fort Negen occupies a rather large space in Amsterdam-West. Their Boeren – or Farmer’s Bread – is incredibly moist, with a delicious crust, and a mild flavor.

I had this with good EVOO from Crete on some days, and Délice de Bourgogne on others.

€7,8 for a medium-dense, large loaf (correct, we are not in America anymore!)

Sourdough, Bakkerij Mater, Amsterdam, The Netherlands (Feb)

Bakkerij Mater’s sourdough had a pronounced lick, a nicely burnished crust, and a mild flavor.

€5,5 for a medium-dense, small loaf.

Bakkerij Mater is in Amsterdam’s Pijp at Ceintuurbaan 320 hs, 1072 GP Amsterdam

 

Wholewheat Sourdough, knock knock bakery, Amsterdam, The Netherlands (Feb)

knock knock bakery had opened only three weeks ago, and it was right around the corner from me in Westerpark. Their wholewheat bread has a nice crust, and a mild nutty flavor. I enjoyed eating this with hazelnut-peanut butter topped with homemade orange marmalade with laurel that I got from nu koffie & delicatessen.

City Sourdough, Ulmus Bakkerij, Amsterdam, The Netherlands (Feb)

Ulmus’ sourdough had really nice earthy and nutty aromas.

Sourdough, Welcome Home, Brooklyn, NY (Feb)

Welcome Home is a nice addition to Bed-Stuy. Their loaves seem to sell out quickly, so get there early!

Country Sourdough, Mel the Bakery, Hudson, NY (Feb)

Mel the Bakery used to be in Manhattan, but seems to have moved to Hudson, NY. Their sourdough was incredible!

Upstate Levain, Kingston Bread + Bar, Kingston, NY (Feb)

Kingston Bread + Bar’s Upstate Levain is made of 50/50 white and whole-wheat flour. The loaf we got was a little underproofed, but was still flavorful.

$8 for a medium-dense, medium-sized loaf.

Einkorn Porridge Wholewheat, Brooklyn Granary & Mill, Brooklyn, NY (Apr, Jul, Aug, Oct, Nov)

Brooklyn Granary & Mill is a gristmill that stone grinds whole grains. When I bought my loaf in April they didn’t a full time baking operation, but were doing occasional pop-ups. Since then they have opened a brick-and-mortar location in Gowanus.

Their bread was dense, a beautifully burnished crust, and very nutty, earthy flavor. I really enjoyed eating the bread plain with cultured butter from Frentel.

$10 for a dense, small-medium sized pan loaf.

Their pop-up was at Rhodora Wine Bar in Fort Greene at 197 Adelphi St, Brooklyn, NY 11205

Brooklyn Granary & Mill is located at 240 Huntington St, Brooklyn, NY 11231

 

Sourdough – Khorasan Rye, Perlant, Paris (May)

Perlant might current be my favorite Paris bread. Not only do they serve excellent coffee, but they make excellent sourdough. Look at that lick!

Sourdough – Korazan, Les Resistants Epicerie, Paris (May)

My goto epicerie in Canal Saint-Martin also makes good homemade sourdough.

Petanielle Noire de Nice, Fournil Zielinska, Nice (May)

Decent sourdough in Old Nice. 500g for 8 Euro

Fournil Zielinska was at 4-6 Rue Jules Gilly, 06000 Nice, France. It appears to be currently closed.

 

Sourdough, Petrin Couchette, Marseille, France (May)

Petrin Couchette was a daily stop for coffee, but they also make some of the tastiest sourdough in Marseille.

Sourdough, ille brød, Oslo, Norway (May, Aug)

ille brød’s sourdough is made using 20-25% whole grain using Norwegian landhvete. The bread was incredibly moist, with a fantastic, nutty crust. I enjoyed eating this with good butter, topped with really good Spanish pistachio cream from The Real Organic Pistachio and honey.

The large, moderately dense loaf was 135 NOK (≈ 13,25 USD)

Babbo Collective has a few locations in Oslo. NOK 62 (~$6) for a medium-sized loaf.

I got my loaf at their Øvrefoss location at Øvrefoss 4, 0555 Oslo, Norway

 

Sourdough, The Little Pickle, Oslo, Norway

The Little Pickle is many things under one roof: a coffee roaster, a kitchen, and a bread and pastry operation. Their bread was medium-dense, with a nice crust and sweet crumb.

Levain Le Vin in Canal St. Martin is at 83 Rue du Faubourg Saint-Martin, 75010 Paris, France.

 

Sourdough, Ten Belles, Paris, France (Sep)

Ten Belles is a Paris OG, and I think it’s still some of the very best sourdough in Paris. Their breads have that burnished crust that isn’t that common in Paris, that I really love.

I sometimes get my bread from their Paris 11 location at 17-19 R. Bréguet, 75011 Paris, France, but more often I get them at their Paris 10 location in Canal Saint-Martin at 10 Rue de la Grange aux Belles, 75010 Paris, France
