Good Bread: Pane di Segale at Perino Vesco in Turin, Italy

I stumbled upon Perino Vesco while Mela and I were walking on Via Cavour one sunny February day. Most Italian bakeries use good quality ingredients, but there seems to be, at least as far as bread and pastries are concerned, a nationwide aversion to bringing out the flavors of dough using caramelizarion. Perino Vesco is an exception.

Mela and Perino Vesco’s pane di segale

Perino Vesco’s rye bread is made using organic rye flour from Tuscany made by Podere Peretto. The moderately dense crumb is moist and incredibly flavorful, as is the well-burnished crust.
